The equipment is made ready. An electric
crusher is fixed over a large
vat.

The grapes are poured into the crusher. This
process has
replaced traditional crushing by foot.

The crushed grapes are covered and left overnight.

The grape juice is ready to be drained and filtered.

The grape juice is strained through a muslin filter
while an electric pump
sends it to holding tanks.

The juice is stored in steel tanks where it will ferment and mature before
being bottled.

Nothing is wasted and the remains of the crushed
grapes are removed from the vat.

They are placed in a hand operated crusher which
will extract the very
last drops of juice.

The crusher is filled.

Blocks of wood are placed on the top.

A handle is inserted and pushed backwards and forwards to operate the
screw mechanism.

All that remains is to remove the waste and wait until
the New Year to
sample the produce!
